{Interview} with Carolyn Murphy

At the start of my {60-Day Vegan Challenge} a few months ago, I sought out the guidance of Vegan pros and fellow bloggers. In my search for a Vegan guru, I came across Carolyn of {Peachmeal}. We emailed back-and-forth between Raleigh, NC and Germany about recipes and inspirations and now I want you all to have the opportunity to meet her.

Carolyn is half Canadian, half Australian. She grew up in Ontario, Canada and attained a B.S. in Geography. For the last two years, she has been living in Germany exploring Europe and teaching English.

Carolyn’s Passions

Cooking. Baking. Morning coffees. Snacks. The Outdoors. Sports. Traveling.

Vegan Start

Carolyn was fortunate to grow up in a very health conscious family and always had 3 really healthy meals full of fruits and veggies. She became vegetarian about 7 years ago after watching a film about slaughter houses. As she learned more about veganism, she was inspired to embrace the lifestyle. Carolyn’s top reasons for being vegan are the following:

  • How much better she felt when she was on a fully vegan diet.
  • The inspiration from following other bloggers and the abundance of recipes and vegan options that are now available in the supermarket and many restaurants.

Carolyn’s Tips for Vegan Beginners

  • Don’t be too hard on yourself and go at your own pace. What works for someone might not work for you. It’s important to find your own balance and figure out what makes you feel good!
  • Find a great vegan blog & start cooking.
  • Find healthy, vegan treats that satisfy your cravings. (Look below for Carolyn’s favorites!)

Being Vegan in Restaurants

These days in North America, I think it’s pretty to find vegan options in restaurants but in Europe Carolyn finds it much harder, especially in smaller cities and villages. But most restaurants are happy to accommodate to any special requests, and usually come up with something pretty good. At less creative places, you might have to give the waiter some ideas, so you can always ask for a salad with no eggs/cheese + balsamic and oil, a veggie stir fry, or pasta with veggies and olive oil. Those are all pretty basic!

The Inspiration

Carolyn started blogging about a year ago as a hobby to keep track of her recipes. Her mother put together a farewell gift, a cookbook with some of her favorite recipes and called it PeaceMeal. Carolyn liked the name so she stuck with it!

3 Vegan Kitchen Staples

1. Avocados

2. Oats. As a flour, a hot or cold breakfast, or blended them into a smoothie for some fiber. 

3. Coconut Oil. It’s healthy and when you have a chocolate craving you can make delicious, raw, vegan chocolate in under 5 minutes! Just melt it and add some cocoa powder and maple syrup!

1. Garlic and Sun-Dried Tomato Cheese Ball

Chef’s Tip: Don’t eat this if you have to talk to anyone in the next 24 hours! It’s super garlicky and best enjoyed with a glass of white wine on a Friday night!)

Chef’s Tip: The PB ones are the best but Carolyn recommends you experiment with whatever flavors you’d like!

Chef’s Tip: This is Caroyln’s absolute favorite sauce! It’s sweet and savoury and goes amazingly with roasted vegetables (especially sweet potatoes!) for a simple dinner.
