I made these cookie prior to a strenuous weekend of performances and they literally ‘powered’ me through all my rehearsing, teaching and performing.

{Matcha} Green Tea Power Cookies
DRY INGREDIENTS
-1/4 cup ground flax seeds + 3/4 cup water
-1 1/2 cup flour (all-purpose, oat, almond, or cashew)
– 1 cup rolled oats
– 1 Tbsp Matcha
– 1/2 tsp of baking powder & baking soda
– 1 tsp cinnamon & salt
– 1 1/2 cups pumpkin seeds
– 1/4 cup raisins
-1/4 cup sunflower seeds
– 1/4 cup dark chocolate chunks (I used a vegan, naturally sweetened chocolate bar and chopped it up but any chocolate chips would be fine!)
– 1/3 cup coconut oil (not melted)
– 1/2 cup unsweetened apple sauce
– 3/4 cup agave
– 1/4 cup almond milk
- Preheat oven to 375 F.
- Mix the flax and water in a small cup and let it sit for 5-10 minutes. This allows the flax to become like a eggy glue (in a yummy way).
- Mix all dry ingredients (flours, almond meal, oats, Matcha, baking powder, baking soda, cinnamon, salt) in a large bowl. Once well mixed stir in the pumpkin seeds, raisins, sunflower seeds and chocolate.
- Mix all wet ingredients (coconut oil, flax+water mixture, apple sauce, agave and almond milk) separately in a medium bowl.
- Pour wet ingredients in with the dry ingredients and use a wooden spoon to combine.
- Place a heaping tablespoons of the dough onto a parchment paper lined baking sheet and bake for 10-12 minutes. I made 45 two-bit cookies.
